Beetroot Falafel

Yesterday I made this for my lunch and it was delicious!! The recipe is from the BBC Good Food Website, but I edited it a bit because of what I had in the house.


Its very healthy, especially when served with salad, it also keeps you quite full all afternoon (without that 3pm post-carb slump)

Serves 2 (6 falafel)


  • 1/2 tbsp olive oil
  • 1 onions, chopped
  • 1 clove of garlic (crushed)
  • 1 tsp ground cumin
  • 1 x 400g cans chickpeas, drained
  • 250g cooked beetroot, peeled, trimmed and coarsely grated
  • 1 egg OR a generous drizzle of olive oil (to help bind the mix together)
  • 1 tbsp tahini paste OR a teaspoon of any nut butter (peanut, cashew etc)
  • vegetable oil, for brushing or frying

1. Heat the olive oil in a frying pan and fry the onions & garlic until softened but not coloured. Add the cumin and cook for 1 min, then scrape the mixture into a food processor with the chickpeas, two-thirds of the grated beetroot, oil and tahini.

Whizz to a rough paste, then scrape into a bowl and stir in the remaining grated beetroot with plenty of seasoning.

2. With damp hands, shape into about 6 balls – then flatten to make the falafel shape

3. Fry the falafel in a bit of vegetable oil in a frying pan, until both sides are done.

4. Serve with lettuce, tomato and a yoghurt-mint-cucumber drizzle OR in a pitta bread with salad.

It makes a nice tasty lunch, without carbs or cheese, so no guilt involved there! Some might say it is a bit of a faff, but worth it all in the end.

This recipe is part of my exploration to find some exciting healthy food, full of vegetables and protein. So that weight loss is not dominated by “missing out” and “cutting out”, it is embracing an entirely new way of eating.
